WHAT TO ORDER? Too many choices tempt the diner. Sala signature seafood for two offers grilled Canadian lobster, salmon, trout, sea bass and scallops on hot rocks with poached king shrimp, mussels, blue swimmer crab, smoked salmon pate and crab mayonnaise. Try Thai for two (kong ruam) for a chance to savour regional cuisine with grilled shrimp, fish cakes, turmeric squid, Chiang Mai pork sausage, green mango, coconut shrimp and pork belly relish. The chef recommends king scallops, which are pan-seared and dusted with Sichuan pepper and lightly scented with coriander oil and lime leaf. Organic Australian angus beef tenderloin is perfectly grilled, as is a tempting collection of seafood, much caught in the waters surrounding Samui and some brought in from Tasmania. Exotic side dishes of select vegetables, including sweet potato with yuzu and togarashi, will delight. For dessert, order Valrhona banana for a chocolate fix.
