Waldorf Astoria's Front Room Returns With A New Thai Cuisine Concept | Thailand Tatler

Reopened earlier this month on November 6, the Front Room at the Waldorf Astoria Bangkok introduced a new dining concept that puts the heart of Thai cuisine on the plate. Inspired by recipes of our Thai matriarchs, the Front Room chefs aim to highlight the key eight flavours of Thai cuisine which make it one of the most unique and beloved in the world. These flavours, to the best of English translation, include spicy, sour, sweet, salty, bitter, oily, astringent and mild. 

To produce a convincingly nostalgic menu that will remind Thai of homecooked meals by mum or grandmother, Front Room consulted with chef Supanat Khanarak and Dr Niphatchanok Najpinij, experts in Thai cuisines and heritage. Collaborating with the two, the Thai Front Room team led by sous chef Sarocha Rajatanawin came to the same conclusion that simplicity mixed with high quality ingredients is how the brilliance of Thai food is best unlocked. That, and the attentiveness that a mum would put on cooking for her family.
