So you have been tasked at creating a plant-based menu for your friends. Where do you start? The ingredients? And then what? What do you do to plant ingredients to make them both look and taste amazing? Perhaps a good example or some culinary inspiration from professional and passionate chefs is a good place to start.

I recently wrote about my plant-based dining experiences with fine dining restaurants, and now I am adding Cote to the list after having just visited for a Christmas lunch. Slightly peeve initially that my tasting menu meal was priced the same as my partner’s meat-based tasting menu, once I had seen the work that went into each of my plates I understood why. Go to the head of the table, Cote. That meal is going to take some beating but rest assured I will keep looking in 2021.

Price for the Christmas lunch tasting menu: 4,000-5,000 baht per head without wine pairing.
