Khao chae
The meal arrives in biodegradable boxes, each labelled with the sequence to be eaten. The meal starts with khao chae—the royal delicacy to cool you off while awakening the senses. With all the condiments meticulously made, including the sweetened deep-fried shallot and shrimp paste balls, the actual highlight is the rice. The fragrance, the waxy appearance and the glutenous texture are all characteristics of the very best jasmine rice.
As the meal progresses, the flavours intensify. Sweet-tooths will swoon over the rice noodle served with chili paste and sugary coconut cream with fish-ball reductions. Both sauces are orchestras of tastes and aromas. Continuing with a curious duo of som-tam and rice cooked with coconut cream, you will be left invigorated and hungry for more.
